Garlic mustard

Garlic mustard. - also known as ‘’jack by the hedge’’ because that’s where you’ll find him,a brassicaceae or one of the mustards, surprisingly enough. An invasive weed that’s so tasty you’ll actually be happy it’s there. Pretty green leaves and small white flowers. Containing vitamins a and c. It has a strong garlic flavour that’s fabulous in a plethora of meals- in this case an easy pesto for the freezer with what I’ve already got in the house.  Combine pine nuts with your favourite hard cheese, I have gone with a sharp mature cheddar,add oil and blend for a simple pesto you can freeze in an ice cube tray and save for those days you just can’t be bothered to cook, or if you’re a pasta lover, every day those cravings hit. You can leave out the cheese, add vegan cheese, use different nuts like walnuts,  experiment until your heart is content really! Just try and cover with enough oil to avoid discolouration when freezing. The plant prefers shady places but gives growth a good shot everywhere, don’t we all, so once you know what you’re looking for you’ll start to see jack by the hedges without trying
